What is the fuss on blonde chocolate? It’s new in the scene and it was a discovered accidentally in 2006 by chocolate makers at Valrhona when they wanted to make white chocolate roast chips (cocoa beans, sugar, and milk solids) at somewhere between 200° F and 275° F. What they discovered is that the heat turns the chocolate a nice milky-coffee color and coaxes out a totally new flavor profile. The new caramelized white chocolate became known as blonde chocolate. The process renders white chocolate, milky white, intensely sweet, a shade of brown akin to caramel. Blonde chocolate has a toastier, fuller taste than its pale predecessor.
